04 Bacon with Honey Glazed Turnips, Mustard Greens and Mostarda
I was a little skeptical and curious as to exactly what they meant by bacon. So I was a little surprised when we were presented with this large hunk of fatty, juicy meat, having never had bacon in this form. The glazed turnips were very thin, and a little floppy, but very sweet. I especially liked the way the tangy mostarda complimented the bacon. I think the majority of the mostarda (an Italian "fruit mustard" that's specially preserved) was of the citrus family and had a nice consistency and satisfying bite.
